Add all ingredients except water and chocolate chips to the bowl of a food processor. Pulse/process until well combined.
Stop the machine, add water, and continue to process until well combined and moist. Stir in chocolate chips. Form into balls, whatever size you want! We do slightly smaller than a golf ball size, which makes 14. Store in an airtight container for up to 3 days.
IMPORTANT! You'll notice that they seem really wet after you add the 3 Tbsp water, but I promise you didn't do it wrong. You have to let them sit for maybe 10 - 15 minutes and the oats will absorb it. It helps keep them from drying out after a few hours, and ultimately gives them the fudgy texture you want.
