Vegetarian Cincinnati Style Chili

Although I’ve lived in Seattle and Chicago and we’re currently in Columbus, I’m a born and raised Cincinnati girl at heart.  Which means that the unique (bizarre?!) “Cincinnati style” chili was totally normal and totally delicious and absolutely consumed regularly growing up.  It’s just what you did, no questions asked, and everyone I knew loved it.  The most popular place to get it was (is!) Skyline Chili (or Gold Star), where it is served on top of a hotdog (cheese coney) or piled on top of spaghetti and sprinkled with cheese (known as a “3-way”), plus onions (“4-way”), and/or beans (“5-way” Whew).

Dark Chocolate Almond Overnight Oats

Are you sick of overnight oats?  So 2016?  I hear you, I feel like these have been done and done again and maybe we should all just move on.  Or maybe we should all just think about how freaking lucky we are to even live in a time and place where you can buy healthy ingredients, mix them all together and come down in the morning to what is basically DESSERT FOR BREAKFAST, people.  Seriously, these Dark Chocolate Almond overnight oats may not be your thing, or maybe they will be.  Only one way to find out!

Healthy Cereal Alternative: Crunchy Apple, Nut, and Seed Bowls

(Update 4/2019: Be sure to read the Recipe Notes for a small variation on this one that is also amazing and maybe even better?!)

Sometimes you just need a little kick in the butt to get out of a breakfast rut.  Maybe you’re sick of overnight oats, or scrambled eggs or avocado toast or leftover pizza (#nojudgement), or maybe you’ve been skipping it altogether.  And look, I’m not gonna lie and say this healthy cereal alternative is as easy as opening a box of bran flakes and pouring into a bowl. BUT I’m willing to bet you may find the few extra minutes for chopping and assembly is just WORTH IT and a solid addition to your morning rotation.  Dare I even say it’s kid-friendly, depending of course and as always on your kiddos.  (For us, it’s 1 out of 3 but that means more for me, right?!) Also, let me just say that it tastes much better than it photographs but still we need a shot before digging in:

Simple Saucy Tofu Bowls

OK, here’s the thing.  I love to cook and spend time in the kitchen, so sometimes when I say “simple” it might be a little bit of a stretch.  I get it.  Some of you get home late from work, some of you don’t love to cook, and others may love to cook but aren’t feeling it every single night.  In fact, that kinda happened to me lately where I hit a wall and suddenly wanted to eat all meals out because of the thought of cleaning up after cooking and also there are so many great places these days with food just ready for you to eat.  Sigh.  But then I was back at it, because the kitchen is my happy place, and also because eating out all the time adds up in more ways than one #truth.  In the process of easing back in, these Simple Saucy Tofu Bowls were born.  And they truly are simple, with just 4 pantry items!

Let’s Talk Ingredients

  • Perfectly cooked tofu (any brand, just buy “extra firm”)
  • My most favorite Organic Girl Herb Goddess vinaigrette (is it a sauce?  Is it a dressing?  Do we even care if it tastes this good?!)
  • Whatever whole grain you choose (I used Trader Joe’s Sprouted Organic California rice mix)
  • And lots of green leafy goodness. 

I even took a pic of the simplicity for you.  And if you’re feeling annoyed because you think you need to run out and buy a certain dressing, know that they have this one in the produce section at Whole Foods (and I don’t think you’ll regret it) but Trader Joe’s also sells something similar (their Green Goddess dressing).  Or if you stay tuned, I am going to be posting a recipe soon that attempts to re-create it at home.

Simple Smoky Roasted Red Pepper Hummus

I admit to being a hummus freak.  But if you are too, you know that all hummus is not created equal, not even close.  It’s always a bit of a bummer when you buy a new brand and then get home, rip into it to munch while unpacking groceries, and realize it’s not all that great.  I was in Florida last week with the kids visiting my parents, and bought some roasted red pepper hummus at their grocery down there.  (It was a local FL brand and I wanted to link it here but can’t remember the brand…will update here if I remember.)  Anyway, the point is that it was SO GOOD that it made me want (need) to recreate it.  And here we have it folks, the final result: Simple, smoky roasted red pepper hummus!

Trader Joe’s Cauliflower Gnocchi with Pesto and Brussels

Just looking at this cauliflower gnocchi with pesto and Brussels makes me want to reach into the screen and grab one of those pillow-y little blobs of saucy-covered deliciousness.  And it can be yours in just 20 (mainly hands-off!) minutes!  Just make sure you make enough to share.  Or maybe don’t.  No judgment.

I just love Trader Joe’s. Every time I go I find new random products and prepped veggies and frozen foods to make meals easier, like this magic.  The nearest one is 20 minutes away (are you listening TJ?!  Forty minutes round trip for groceries is something I don’t do often so can you maybe open one closer pretty please?!)  Their cauliflower gnocchi isn’t new to me, because we’ve had it before BUT in the past I totally messed it up and did something really dumb called “following the package instructions”.  This is something you just can’t do with TJ cauliflower gnocchi.  You’ll end up with gooey lumps of sadness and an uncomfortable sense of confusion as to why everyone is raving about them on social media.

Shredded Kale and Pomegranate Salad with Shallot Vinaigrette

I taught a Hearty Vegetarian Soups cooking class the other day, and figured I needed a little something to mix in there between all the soups.  Enter this Shredded Kale and Pomegranate Salad with Shallot Vinaigrette – a new favorite on repeat around here these days (and a great side idea for upcoming holiday gatherings…).  It’s everything you want from a fall/wintery salad dish: healthy green goodness topped off with tart and juicy pomegranate seeds, crisp apples, salty sunflower seeds, and creamy gorgonzola.  All “lightly dressed” (we so fancy) with a four ingredient shallot vinaigrette.  So let’s get started, shall we?!  And don’t be put off by all the kale, you’re going to easily make it soft and wilted and studded with little bursts of flavor:

The Best Vanilla Bean Overnight Oats

Confession: I’ve never been a big fan of overnight oats.  And I could take or leave chia seeds because of how they swell up and get mushy and stick to my teeth and the inside of the blender.  BUT, the first time I tried these Vanilla Bean Overnight Oats after developing them for a local fitness studio, I had two helpings and found myself scraping the bottom of the bowl.  Who woulda thought.  If you are even the tiniest bit into overnight oats, you may need to try these ASAP!  They’re simple and creamy with the perfect amount of vanilla flavor.  (And if you like chocolate better, check out my Dark Chocolate Almond version!)

Also!  Can we talk about the whole concept of overnight oats in general?!  Taking 5 minutes to pour a few things into a bowl or jar, sticking it in the fridge and having breakfast just ready and waiting for you in the morning??  I so wish I had invented overnight oats.  (Who did by the way? Do we know?!?)  Mornings around here can get crazy, so when I remember that I made a batch of these and have them waiting in the fridge, it’s like a little mental sigh of relief.  Slice some strawberries and VOILA.

Tangy Hummus Pasta with Sriracha Chickpeas
