roasted sweet potato and black bean burger | feedmegreens.comWow that title is a mouthful! And so are these burgers, so I highly recommend making them STAT.  Of course I do, I made them up 🙂 But seriously, if you like a little sweet and a little spicy, give them a try. (Even if you don’t like veggie burgers, make this sauce and slather it on things.  Just trust me.  You can even use it as a dip for pita, tortilla chips, etc.  I will probably do a whole post on this amazing green sauce, but for now I am just including the recipe below!)

Our Favorite Black Bean Burgers with Spicy Chipotle Sauce

I’m excited to share this one, because it’s one of my staple recipes!  I haven’t eaten meat in so many years that I don’t have a great comparison point, but my meat-loving hubby, daughters, and even my dad really love these flavorful black bean burgers, so I am hoping you will too if you give them a try!  Another reason these are on frequent rotation is that we almost always have all the ingredients on hand and they come together really quickly once the rice is cooked.  Mix up the other ingredients while the rice cooks and you’re ready to go!  If you’ve been vegetarian for any amount of time, you know that veggie burgers are often dry and bland, but I’ve tweaked these over time to (hopefully!) avoid those traps.

Roasted Butternut Squash and Red Lentil Burgers

Lately I have been thinking about how often we use the terms “easy” or “quick” for recipes, and how those terms are so relative.  I’m always messing around in the kitchen and love cooking, so what is “simple” or “quick” for me may be different than what you consider a simple or quick recipe.  So I’ll always be honest and let you know if there’s a recipe that takes a little more time (but is worth it, or else I wouldn’t post!) or one that is truly really quick and simple.

For me this one was “easy”, but it does have a few moving parts (i.e. cooking the brown rice, cooking the red lentils, and roasting the squash).  To make it easier, any of these steps can be done ahead of time and then all ingredients assembled into one big bowl of sweet and slightly spicy “batter” when you’re ready to go.  You can also make it go quicker by buying pre-cut butternut squash, and/or using pre-cooked or quick cooking brown rice.
