April 10, 2019 by ewankewellness Leave a Comment

Are you sick of overnight oats?  So 2016?  I hear you, I feel like these have been done and done again and maybe we should all just move on.  Or maybe we should all just think about how freaking lucky we are to even live in a time and place where you can buy healthy ingredients, mix them all together and come down in the morning to what is basically DESSERT FOR BREAKFAST, people.  Seriously, these Dark Chocolate Almond overnight oats may not be your thing, or maybe they will be.  Only one way to find out!

Healthy Cereal Alternative: Crunchy Apple, Nut, and Seed Bowls

March 28, 2019 by ewankewellness Leave a Comment

(Update 4/2019: Be sure to read the Recipe Notes for a small variation on this one that is also amazing and maybe even better?!)

Sometimes you just need a little kick in the butt to get out of a breakfast rut.  Maybe you’re sick of overnight oats, or scrambled eggs or avocado toast or leftover pizza (#nojudgement), or maybe you’ve been skipping it altogether.  And look, I’m not gonna lie and say this healthy cereal alternative is as easy as opening a box of bran flakes and pouring into a bowl. BUT I’m willing to bet you may find the few extra minutes for chopping and assembly is just WORTH IT and a solid addition to your morning rotation.  Dare I even say it’s kid-friendly, depending of course and as always on your kiddos.  (For us, it’s 1 out of 3 but that means more for me, right?!) Also, let me just say that it tastes much better than it photographs but still we need a shot before digging in:

The Best Vanilla Bean Overnight Oats

October 24, 2018 by ewankewellness Leave a Comment

Confession: I’ve never been a big fan of overnight oats.  And I could take or leave chia seeds because of how they swell up and get mushy and stick to my teeth and the inside of the blender.  BUT, the first time I tried these Vanilla Bean Overnight Oats after developing them for a local fitness studio, I had two helpings and found myself scraping the bottom of the bowl.  Who woulda thought.  If you are even the tiniest bit into overnight oats, you may need to try these ASAP!  They’re simple and creamy with the perfect amount of vanilla flavor.  (And if you like chocolate better, check out my Dark Chocolate Almond version!)

Also!  Can we talk about the whole concept of overnight oats in general?!  Taking 5 minutes to pour a few things into a bowl or jar, sticking it in the fridge and having breakfast just ready and waiting for you in the morning??  I so wish I had invented overnight oats.  (Who did by the way? Do we know?!?)  Mornings around here can get crazy, so when I remember that I made a batch of these and have them waiting in the fridge, it’s like a little mental sigh of relief.  Slice some strawberries and VOILA.

No Bake Chocolate Brownie Bites

No Bake Chocolate Brownie Bites | feedmegreens.com

These No Bake Chocolate Brownie Bites will always take me back to an hour spent sitting in the parking lot of the swim club, a torrential downpour, and our car windows fogged up with 3 restless kids waiting to hear if their swim meet would be cancelled.  Basically we were camping out, in the minivan, with nothing but these brownie bites and some water to get us through.  We are rugged survivors people, let me tell you.

Sweet Potato Waffles

June 28, 2018 by ewankewellness Leave a Comment

With the slower mornings of summer, it seems like the kids are requesting pancakes or waffles more than during the school year (every day’s a weekend for them, right?!) And I don’t mind it, but I’ve been brainstorming ways to try to work some more nutrients in.  So I decided to create these sweet potato waffles, which also happy to be gluten-free if that’s something that you or someone you love needs to consider!

Savory Sweet Potato Cakes

March 7, 2018 by ewankewellness Leave a Comment

Grated sweet potato has to be one of my most favorite additions to the breakfast line-up. I was recently introduced to the concept of using them to make hash browns, which is amazing because the whole family loves and veggies for breakfast = win-win. The other day, I decided to take it one step further and created these savory sweet potato cakes for breakfast:

But they’re not just for breakfast actually. Don’t be fooled and pigeonholed.  One of my best friends made them for dinner recently and served with pork tenderloin and homemade apple chutney.  Another friend made them and used them as the base for a twist on eggs Benedict.  And I love topping them with sliced avocado and over-easy egg.  So go crazy and you do you!

Banana Oat Chocolate Chip Pancakes

February 17, 2017 by ewankewellness Leave a Comment

My daughter, who claims not to like pancakes or bananas, helped me come up with these banana oat chocolate chip pancakes the other day… and what do you know, she loves them!  Although she still doesn’t like pancakes or bananas, of course 🙂  If you have a high speed blender, just throw all the ingredients (except chocolate chips) in there and blend until smooth, OR you can also use a food processor which works great too.  A regular blender would get the job done too, maybe with just a little more milk added to keep things moving.

They turned out the perfect consistency, with enough sweetness from the chocolate chips and banana that you don’t even need syrup.  Although a little butter is always good!  My favorite is Kerrygold brand.

You can easily make these gluten free or vegan, depending on which oats, milk, and chocolate chips you choose.  If you don’t like chocolate chips, blueberries are great in these too.
