My daughter, who claims not to like pancakes or bananas, helped me come up with these banana oat chocolate chip pancakes the other day… and what do you know, she loves them! Although she still doesn’t like pancakes or bananas, of course 🙂 If you have a high speed blender, just throw all the ingredients (except chocolate chips) in there and blend until smooth, OR you can also use a food processor which works great too. A regular blender would get the job done too, maybe with just a little more milk added to keep things moving.
They turned out the perfect consistency, with enough sweetness from the chocolate chips and banana that you don’t even need syrup. Although a little butter is always good! My favorite is Kerrygold brand.
You can easily make these gluten free or vegan, depending on which oats, milk, and chocolate chips you choose. If you don’t like chocolate chips, blueberries are great in these too.

These come together really quickly in the blender! They don't even need syrup if you use the chocolate chips, but we like to melt some butter on top after cooking.
- 2 cups rolled oats (use certified gluten free if preferred)
- 1 ripe banana
- 2/3 cup applesauce (or use half of another banana)
- 1/2 cup milk of choice (see recipe Notes)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla
- 2 tbsp coconut oil
- 1/2 cup mini chocolate chips

Add all ingredients except chocolate chips to a blender or food processor and process until smooth. Mix in the chocolate chips. Using 1/3 cup measure, pour batter onto a lightly oiled skillet and cook for about 3 - 5 minutes. Flip and cook until both sides are browned to taste.
We have used both whole milk and almond milk, and loved them both ways. Other non-dairy milks would work great too!
